The link supplied doesn't provide any explanation or justification for why Monday was the chosen day for suspending 500+ person events, Hillsong, rugby league, or otherwise.
We can only surmise why, but given Scotty's really close to the head of Hillsong (don't forget Morrison asked the if Mr Hillsong could also be invited to the Whitehouse), you can join the dots. It may not have been the sole reason, but I find hard to believe its wasn't a reason.

Come on, be a bit easy on my cousin Brendan; he is only stating what Morrison has asked him to say. His own view was that the ban should have been imposed on the Friday; ScoMo asked him to hold off for the weekend. The Premiers had no individual say in the decision either.
