How'd you go @whufc? I've been smoking / slow cooking for several years and have mixed success with brisket, easily the hardest of that type of cooking to nail. Big one to try in a new cooking device!
Was first cook on the new weber so probably not completely ideal......one needs to understand the heating trends/patterns of his weber. :lol:

Due to this it took a little bit longer than i would have liked to get the weber set up to the temps i wanted and brisket in.

Once up and running the cook itself went pretty well, good consistent heat with the snake method no fluctuations and really enjoyed the flavors.

Definitely need to an invest in a better thermometer, I'm not completely convinced of the accuracy of my current cheapo one.

Will more than likely have a play around again next week as we have a bye with footy. Got a mate cutting up a lamb for us so reckon i will grab the shoulder and have a crack at that. I find the lamb shoulders are pretty much bullet proof. So pretty keen for that.

Essentially the cook was:

-weber at about 110c ...... used some apple wood chips sprinkled along the snake along with injecting some apple vinegar cider into the brisket
-always place fat side down
-cooked for about 4 hours (brisket was at an internal of about 68c)
-wrapped and spritzed with the apple vinegar cider/water solution
-then spritzed again every hour
-was somewhere between 90-95c internal after about another 2.5 hours.
-Let rest for an hour.....by that stage we were very hungry :lol:

F*** resting it, I only rest meat if one has cooked quicker than another, plus you'd have to take it out before it hits optimum internal temp as it will still keep cooking while it's wrapped and placed in an esky.

Yep, do yourself a favour and lash out on a decent Matador thermometer that connects to your phone and convince the missus that a pellet smoker will be a great addition to the family, it is no-fuss precision cooking.

PS: Don't be afraid to douse a pineapple in maple or golden syrup, wrap it up and chuck that in too, it will disappear shortly after it hits the serving tray.

Yeah getting the thermometer sorted straight away.

Got to be honest i love the charcoal and dont mind the journey/challenge or whatever you want to call of it cooking with the coals. I like my hobbies to offer a challenge of sorts.

Don't get me wrong, I love it too, there's a great deal of satisfaction carving up the perfect lamb or pork, one trick that I discovered is cooking them on the rack in the Weber and having a tray of water underneath the meat, it keeps the meat extra moist.

Yeah a tray underneath is an absolute must. I normally use hot water in there to start with. Haven't done this part myself but have heard people have had success sticking the wood chips in the hot water as well.

After some sickness in the family we had to can our planned trip to Melbourne this week and missing out on the game tonight, so with both of us on leave and needing to be close to home, we decided to be tourists in our own town and stayed at Adelaide Oval Hotel last night and EOS tonight, you get some great deals midweek in winter.

Visited Ambra, Prohibition & Brightstar Brewery yesterday, off to the Hills today.

After a few months off work and some well needed time to reflect I’m excited to be taking on a new role that has me energised by work again for the first time in a while - not least because it’s the first piece of the puzzle sorted to move our family to Tasmania.

For 10 years we’ve discussed it and we’ve procrastinated (mainly me), but now the wheels are in motion. I’m heading off on my own first with the wife and kids to follow - possibly at the end of the school year 2026, but we will determine that at the end of this year.

This has the longest break I’ve had from work since I was first in full time employment 26 years ago and it has been much needed (although longer than initially planned when I resigned without a role to go to in early Feb).

I’ve had the highs and lows of recruitment processes over and over, including applying for roles I don’t want to do…… it makes the new role all the more exciting and the clarity of the move even clearer.

Exciting times - looking forward to a slightly slower pace and more fresh air!

Likely based in Hobart for the shortish term and then likely to land in the north or north west as that is the base for most of the activity of the org.

The good thing is that it will give me a good chance to get a decent taste of both before nailing my decision to the mast.

My brother-in-law moved to Lonnie a few years ago and let’s say it’s best to not mention the war.

Enjoy Hobart, nice place, but I’d rather somewhere warmer … a lot warmer.
