The woman who was convicted of assaulting a police officer and given a 3 year suspended sentence, only to appeal that and have the 3 year gaol sentence re-instated. :lol:

They aren’t the best to watch and didn’t look likely to win tonight but they seem to get the job done these days

New Weber purchased yesterday.

Acquiring a brisket today from our favorite butcher.

Going to aim for an 8 hour, snake method cook.

Grab a few stouts or Guinesses

Been having an argument for the last 2 weeks with Samsung and Telstra about a tablet offer that I should have received with my new Samsung phone. It had past the promotion timeline so Samsung refused to pay up. Yesterday Telstra finally admitted they got it wrong and have sent me $1,250 in cash (the cost of the tablet) as a resolution, will now go buy a new laptop for $500 and the rest can covers accommodation in Melbourne next week, wasnt that keen on a tablet anyway!

How'd you go @whufc? I've been smoking / slow cooking for several years and have mixed success with brisket, easily the hardest of that type of cooking to nail. Big one to try in a new cooking device!
If you want to go quickly, go alone.

I find the brisket the easiest to nail, I cook them up by themselves now even if I'm the only one home, I take it out when the internal reaches 94°C, I try to find a piece that is more rectangular or square opposed to one that tapers off, the Coles ones work a treat, as do their beef shorties.

Smoked shoulder lamb is sensational when perfected, probably my favoure thing to smoke along with pork belly burnt ends in a plum rub.

I've found spritzing every half an hour with either coke or a sweet soft drink and then wrapping in alfoil or butchers paper for the last two hours of the cook give the best results.

My wireless matador thermometer was a game changer, I can be at the pub and monitor the progress of my cook and give myself enough time to get home to take it out, I have 6 probes.

PS: I've never attempted the snake method in the Weber, too much stuffing about if it turns to shit, the charcoal starter makes Weber's so much easier and as long as there's a probe in each piece of meat you'll never fail. As I've gotten older I like to let my devices do the cooking after I've prepped everything.
