Yes you can.

(Bricking it is like what it sounds, turns a phone into a brick)

I cracked my PSP to do things that it otherwise couldn't do but with the relative cheapness of aps I haven't worked about jailbreaking my phone.

ContactsP - Create groups etc, Make group emails/sms without duplicating people. Integrates perfectly with the iPhone's own Contacts.

Angry Birds as mentioned above, there is also a Halloween release.
AppBox Pro - Is a mix of, Alarm, Translator, Loan Calc, Currency Converter, Leveler, Unit Converter & more.
Facebook
Money Smart - Good for Bill tracking
iCoach AFL - is a little app that displays your team
Footy Stats - Quick one person stat tracker (Plenty of Basketball apps etc. as well for different things)

Haven't found an app yet for putting Photo's in an album - without duplicating the photo.

Stick Cricket

Download for free and get the following basic features:-
5 over All Star Slog
World Domination levels 1-3
2 player (able to play against upgraded opponents

Think it's about $4 to upgrade it, will have to now, as have completed the first 3 levels of world domination

Runkeeper Pro is currently free until the end of January

Great app for those that like to go running, or have a new years resolution to start!

Heres a good one for the drinkers out there.

DrinkTracker. Start a session, add the drinks you consume, keep score of your blood alcohol level. Leave it going overnight, so you can see whether you should be driving to get some brekkie the next morning.

I can think of 1 iPhone user who would find it handy.
