Picking up my dry cleaning and the lady handing me $50.

Apparently it was in my jacket pocket

I gave her a $20 tip, now I know why she has always been our dry cleaner!

Doug Thomas taking the time out of his day to come and see my old man in hospital. Despite what alot may think about him he is a top bloke. He was looking good himself as well which was pleasing.

Making a pork roast where the crackling actually turns out. :D Most of the time it doesn't.

I don't know why it worked this time - I do the same thing every time I make one and nine times out of ten it ends up all leathery instead of crunchy. :?

What do you do Fisho/CP?

This is what I do:

Smooth oil over the 'crackling' and sprinkle generously with salt.
Put in the oven on a very high tempreature for 15 to 30mins.
(Turn down before it gets too dark)
And then turn the heat down to moderate to cook for remainder of time.

O:)

Yep almost the same here...only no oil.
Set oven as high as it will go
Make sure the skin is as dry as possible and has been well scored (butcher should do that for ya)
Plenty of salt to draw more moisture out while cooking
Put in oven and turn down to proper temp for your oven.

Worked for my late granny, works for me and apparently Jamie Oliver too :D
Don't know why but 'crackling' can be a strange beast...my dad can get it to work perfectly but my step-mother doing it the same way, using the same oven has never got it to 'crackle' :-?? Guess you just need to try different ways til you find one that works for you...good luck :D

Thanks...was nice to have a win but I hope to god the rest of the tournament is a bit more inspiring. Probably one of the most insipid games I've seen Italy play...normally great fun, like watching 15 Jack Russells going after a ball :?

For anyone who's recorded the England v Wales game or watches highlights...don't adjust your set...there's nothing wrong with it...England are in an off-white replica strip to celebrate Twickenhams 100th birthday :D when the 1st game was also against Wales.

I rated Englands jersey (watching the replays on Fox sports News). Reminded me of the old rugby high-lights shows I used to watch with Mr McLaren calling. I reckon the old style Rugby Jerseys of simple colours are best like the plain scarlet of Wales, the Emerald green of Ireland and pain White of England. England started the rot when they put the two blue and two red stripes on the right arm of their '91 World Cup jersey.
Let that be a lesson to you Port, no one beats the Bays five times in a row in a GF and gets away with it!!!

That's what I do except I rub the salt in as well. I reckon I must not turn the temperature up high enough initially, our oven's a bit old and dodgy. I had it at 230 this time so I'll try it again and see if it still works.
