back up your phone to your computer using itunes, so you have that in case things muck up.
are your photos backed up in icloud? make sure they are all on your phone, so turn "optimise phone storage" off
then, im 90% sure you just change the icloud account for a new one, and when it asks you whether you want to delete data you select no.
then it should start backing up to the new icloud account.
another thing you can try - if you have windows - download the icloud app and that should also sync your photos to it (if they are in icloud. then you can just copy them to another folder just in case)
i did this with my wife's phone - though that was to set up a family sharing setup rather than a completely separate account. still should be the same though.
