Two before IIRC but if you just want general admission you'd virtually be guaranteed a ticket rocking up on the day...

WB v Adel. The best the two teams have ever pulled in Melbourne is a tick under 28,000. The AFL is hoping for as many as 35,000 for this one (Brad Johnson's 300th), so that still leaves you with 15,000 tickets to pick from if they pulled a record vic crowd.
If you want to pay in advance for a level one very good seat, you can do that two weeks out, but comfortably still buy one in the days before hand.
If you want best sets in the house level two you would probably want to buy one in the week before.
If you happy level three, which are still good, just rock up on the day and pay GA.

Saints v Swans would be the only one you may need to buy in advance, and even then, that would be unlikely. the first two, just rock up, if you happy to be in.

I always buy in advance, as I got stuck standing at the MCG one day and it sucked, plus I like level 1 at Telstra Dome as close to the front as possible.

7 weeks to GO!
