What photo editing software does everyone use? Had some experience with Photoshop Elements 8, and ACDSee somethingarather. Not looking for anything really powerful for the time being, just something easy enough to use.

Gimp is an open source alternative to photoshop. Will do most jobs well enough.

I guess it depends if you want to do image editing, or photo editing.
Two vastly different things - and you can get programs that are great for just photo editing.
Photo editing would be cropping, resizing, adjusting colours/contrasts/hues/saturation, red eye reduction, light levels etc.

The Gimp is free, or if something simpler will do so is Paint.net.
