Same thing happens in NT. Mangoes are picked in Katherine and surrounds, then sent to Adealaide and then back to Katherine. (surprise surprise it was REALLY hard to sell "local" mangoes at Woolies in katherine)

I work about 5 minutes from the Market and love it, personally. Sometimes after a very busy morning, it's great to wander around, get a bag of Charlesworth Nuts to nibble and wander around the stalls. Some bargains to be had, but yes, its not the tidiest place in the state.

definatly some questionable asian food getting served in that place.

Don't bother travelling anywhere in South East Asia if you think the Central Market is filthy. You'd be appalled at just about everything.
I personally love the Central Market. Great food, great vibe. The food court is the best.
