Strange question i know, but anyone have any ideas as to where to find an instructor/suitably skilled person?
Its a little strange in that there are no formal qualifications required, rather demonstrated knowledge is needed, although the TAFE courses in Outdoor Education/Adventure are an added bonus....

Try the camping/outdoor shops along Rundle Street. One of them used to have a climbing area set up inside the store - not sure if the store is still there now - it was on a side street near the Crown and Anchor.

So you're asking where do the unemployed indoor rock climbing instructors hang out?

Tough ask!
