Here's my taco recipe - it looks like a lot of stuff but it's piss-easy.
INGREDIENTS
1 packet taco shells
Lettuce
2 tomatoes
Sour cream
1 cup grated cheese
Chili:
1 can chopped tomatoes
1 can red kidney beans
1 little tub tomato paste
500g beef mince
1 onion
Cumin powder
Chili flakes
Sugar
Guacamole:
1 avocado
1/2 lemon
Mayonnaise (I use Praise)
1. Heat a little oil in a large non-stick saucepan. Chop onion, put in saucepan with beef mince, stir until browned. Add canned chopped tomatoes and tomato paste. Drain kidney beans and add them. Throw in a decent sprinkle of cumin, chili flakes and sugar. (I like to add heaps of chili but I'm a bit of a freak like that.) Stir, clap a lid on it and simmer on a low heat for half an hour or so.
2. While that's cooking, you can do the guacamole. Mash the avocado with a good squirt of mayo and the juice of the lemon. Stir until fairly smooth. Put in a bowl.
3. Chop the lettuce and tomato, and grate the cheese. Put lettuce, tomato, cheese and sour cream in four separate little bowls, that way you can stuff your taco however you want.
4. Stick the taco shells in the microwave for 30 seconds. Take the chili off the stove and put in a bowl. Put the tacos on a plate and let people serve themselves.

Put some camembert cheese and sundried tomatoes inside a chicken breast and wrap in puff pastry and cook in a hot oven for about 20 mins until pastry is golden
Serve with oven chips if you want!

One of the easiest to make and turns out very well.
Chicken In Coke:
Around four pieces of chicken per person. Usually wing and thigh works best.
Lay these in a baking dish, while pre-heating the oven to around 200 degrees.
Cover the chicken with 1/3 can of coke. Cover the chicken with a packet of french onion soup. Pour the rest of the coke over the chicken.
Cook until brown, regularly basting the chicken with the coke that has filtered to the bottom. Usually around 35 - 40 minutes.
Serve on two minute noodles or rice. Brings out beautiful, tender chicken with a lovely sauce.

Family Boon are taking a liking to the "Roast in a bag" chicken thingos.
Just put the chicken in the bag, roll it around for a bit then bang it in the oven. Vegies in the steamer, go have two beers and come back. Dinner!

the best dessert...
wrap your favourite chocky bar in puff pastry, bathe in butter and stick it in the oven until golden brown.
serve with vanilla icecream. So unhealthy but so good!!!
the best IMO are snickers and picnic, but whatever takes your fancy. Use the smaller versions, they can be very rich if you use the full size ones.
10 min prep and 15 min cooking time, perfect for Playstation nights with the lads...

French Onion Chops...
Lamb chops.
Sprinkle with a packet of French Onion soup mix.
Wrap in alfoil - place in the over for about an hour.
Serve with whatever you want - I usually serve with mash potatoe and veg.
So tender the meat just falls off the bone.
(Slow cooker - just throw the chops and the FO soup mix in the slow cooker and turn it on...lol)

Macanaigse is one of my faves
make a bolognaise sauce like normal, and then instead of adding normal pasta you cook up a packet macaroni and cheese and use that instead.
great creamy cheese flavour

Stir fry is one of my favourites.
You need to have the fridge/pantry stocked with the right ingredients, but once you've stocked up on them it's easy as:
Get jars of ginger, garlic and chilli for fridge. A bottle of ABC soy (must be this brand!) and a packet of raw cashews for the cupboard. They all last a good few months.
Firstly get the rice going in the microwave = 1 cup of rice in a fairly deep dish + 2 cups of water. Bung it in for 20 mins and that's it!
Then:
1. Chop up whatever vegies you want (I usually go with mushroom, capsicum & broccoli) and put aside.
2. Chop up some chicken (a couple of thigh fillets is usually plenty for 2).
3. Teaspoon of ginger, garlic & chilli (you'll work out your favourite amounts pretty quickly) in a frypan/wok for about a minute.
4. Chicken in until brown.
5. Vegies in for about 4 or 5 min.
6. Add soy sauce and simmer for another couple of mins.
Serve up on rice. Done.
Optional extras - A bit of oyster sauce give it a bit extra. A small tin of coconut milk can also give more sauce to soak into the rice. Coriander is good too, but it's not really something you have lying around.

Nacho's
1 kg mince
1 packet of taco seasoning
1 jar of salsa dip
1 200g pack of cc's
1 small tub of sour cream
some cheese.
Cook mince in saucepan, add seasoning and salsa dip once brown.
Heat cc's in oven (optional).
Spoon mince over cc's then add grated cheese and sour cream (optional).
You'll get about 6 to 8 meals out of this, just as good re-heated.

Variation to this, is to replace the coke with a can of Apricot nectar.

I like Rod's:

The perfect recipe

I've done it a bit lately, and it is an absolute ripper.
