Stats do mean something.
Some teams just cannot beat other teams no matter who is playing. Peyton's first playoff game NY Jets v Indy 41-0 in favour of the JETS. Peyton horrible in that game.
Denver would be nothing without Peyton. Would not be getting too excited about Denver in the next few years when Peyton goes not much depth at QB at the moment. Have seen their Backup couldn't move the ball that well against a woeful and I mean woeful Raider Defence.

MVP does usually go to the deserving player. Much more likely to see a defensive player or even special teams player win a superbowl MVP than a regular season one anyway. Problem is though that if Welker has a great game Manning passed the ball to him amongst others.
