Flathead by the proverbial country mile IMO. Whiting is over-priced, but not over-rated I reckon. Yellowfin are sweeter than KG's, no doubt about it. Also, these days it's now illegal to
remove a Murray Cod from the water at
ANY time, but by all reports (of yesteryear..) they are quality on the fang.
Not listed are sharks - aka 'flake'. We've been lucky enough to get into a solid number of big gummies the past 3-4mths and they're superb beer-battered and deep-fried.

My kids love it - "Tastes just like fish shop fish!"..
I voted Flathead, YF Whiting & Nannygai.
What is highly over-rated however is snapper!

Especially BIG snapper that ppl decide to cook whole in a Weber-style BBQ! NEVER met anyone who didn't overcook the bloody things, which results in stringy, tasteless meat.

Best thing to do is freeze the bigger specimens in 'steaks' then cut it into thinner fillets for cooking later on. It allows the fish to be cooked a lot quicker & retains most of the moisture.
