Simple and (pardon the pub) easy, was Faith No More covering the Commodores hit "Easy". First time I remember seeing an eyebrow ring.

Muse's cover of Nina Simone's "Feeling Good" is brilliant. I love the original, and Muse really do it justice.
I love 'Food and Stuff'. It's where I buy all of my food. And most of my stuff.

Madonnas cover of American Pie is a shocker

Dropkick Murphys do a lot of good covers, none better than Green Fields of France
also the Pogues version of And the Band Played Waltzing Matilda is good

Red Hot Chili Peppers song Under the Bridge was covered by some lady. It was CRAP! It frustrates me as it gets played now and then at work, whilst the original version doesnt.

I'm not a huge fan of the original.
Whether it's been overplayed I'm not sure, but there are definitely better Chilli Pepper songs.

Pearl Jam's version of "Last Kiss" was excellent ! Wayne Cochran did the original.

"All Along The Watchtower"
The original version by Dylan is so haunting.
The cover by Hendrix is so great as to be clinical. Fantastic interpretation.
When somebody suggested to Dylan that it sounds as though the song was written with Hendrix in mind, I think Dylan replied that "They were all written for him".

Manfred Man's Earth Band did a great job of Dylan's "The Mighty Quinn". The band sounds bloody stoned in the original, as does the dude in charge of production etc.
The Byrds version of "Tambourine Man" is a bit too boppy, where as I love the raw gutsy sound of the original.
"Hard Rain is Gonna Fall" again, great original version. The man sings from his soul directly to the consciousness of those with ears to listen. Roxy Music's cover is another great interpretation of a genius' work.

Almost forgot.
"Come on Feel the Noise" brilliantly covered by Quiet Riot. Deep appreciation must be paid to the original by Slade however.
